Sweet Potato Shepard's Pie Recipe

On a cold day, I love any excuse to heat the oven... and this recipe is one of our favorite excuses! Do not expect to have leftovers, although it's a perfect way to use leftover ground beef or leftover beef roast. This is my go-to recipe the day after I make A Perfect Roast. Because I make this recipe so often, I always make sure I have the ingredients on hand., which is easy because most of the ingredients are canned or frozen. Plus, like most of our recipes, there are so many variations so you can make it your own. 

Sweet Potato Shepard's Pie

​INGREDIENTS

Roast beef or ground beef (can be leftover)
Chopped onion
Chopped vegetables such as - peas, corn, carrots (can be frozen or canned)
1 can Tomato Sauce
1-2 Sweet Potato or Yam (can also use regular potatoes)
Butter or ghee
Thyme
Black Pepper

DIRECTIONS
Preheat oven to 350 degrees.

Cook ground beef on medium heat. (If using leftover meat that is already cooked, add meat after sautéing onions.) Add onions and cook until onions become translucent.

While meat and onion mixture is cooking, heat sweet potato in microwave. To do this, first wash it and pierce it several times to allow steam to escape while heating (otherwise you will have a big mess!). Put in microwave for 5-6 minutes and flip it around 3 minutes. When the sweet potato is done cooking, cut it in half and allow it to cool. It will be VERY hot.

Add corn, peas, and/or carrots to your meat mixture. Continue to cook for 1-2 minutes. Season with thyme and pepper to your liking. 

Add tomato sauce to meat mixture and stir. Continue to cook until sauce is boiling. 

While mixture is cooking, your potato should be cooled. Remove contents without the skin into a bowl. Add butter or ghee and mash until smooth. 

Put your meat mixture into a lightly greased ceramic or glass baking dish. Top with the sweet potato and add a little bit of butter and thyme on top. 

Bake for 15-20 minutes or until you see it bubbling. Enjoy!
