What am I?
I am a starchy root vegetable that is often used in cooking and baking. My skin can be red, brown, or purple, and my flesh is typically orange or yellow but can be white or purple.
I have a slightly sweet taste and a creamy texture that makes me popular in all sorts of dishes.
Where I grow
I grow underground in the dirt. I grow in many different regions around the world now, but I come from Peru in South America. I thrive in warm climates with plenty of sunshine. I'm often grown in fields or gardens, where my vines can spread out and produce lots of tasty tubers.
I'm a hardy plant that can survive in many different types of soil, from sandy to clay.
After I'm picked
After I am harvested by hand or by machine, I am cleaned and sorted to make sure that only the best vegetables make it to the store. Some people like to eat me baked or roasted, while others like to use me in recipes like pies, casseroles, and even fries. I'm a versatile vegetable that can be used in all sorts of dishes, from sweet to savory. Give me a try and see what you can create!

Sweet Potato Shepard's Pie Recipe
On a cold day, I love any excuse to heat the oven... and this recipe is one of our favorite excuses! Do not expect to have leftovers, although it's a perfect way to use leftover ground beef or leftover beef roast. This is my go-to recipe the day after I make A Perfect Roast. Because I make this recipe so often, I always make sure I have the ingredients on hand., which is easy because most of the ingredients are canned or frozen. Plus, like most of our recipes, there are so many variations so you can make it your own.
Sweet Potato Tacos
I love sweet potatoes... they are nutritious, affordable, filling, and can spice (or sweeten) any meal.
One day, I thought it might be fun to add sweet potatoes to a Mexican dish, and now it's a must-have ingredient!
What I love about this meal is it's so versatile. I call it a taco, but you can serve it in a variety of ways!
I find that it makes enough for a couple of meals, and you can change the recipe every time you eat it! You can wrap it into a tortilla, leave it plain on the plate (as shown), add different ingredients, and my personal favorite is to add egg and have it for lunch the next day!
